Cocktail Oz

1.5 oz Pierre Ferrand Ambre 
1.5 oz plum wine 
1.0 oz Gruet blanc de noir 
.5 oz fresh lemon juice 
.5 oz apple cider vinegar gastrique* 

Combine all ingredients except sparkling in a mixing glass, shake until well chilled, strain into a coup glass, float blanc de noir on top and garnish with a lemon twist. 

*Cider Gastrique: 
3 cups apple cider vinegar 
7 cups sugar 

Combine in a sauce pan and simmer till reduced by one half. Cool and store.
