The Bespoke Overcoat

5 cl (1.6 oz) Pierre Ferrand Sélection des Anges Cognac

1,5 cl (0.5 oz) Amaro Montenegro

1 cl (0.3 oz) Homemade cofee liqueur

4 chunks of caramelized pineapple

1 cl (0.3 oz) Lemon juice

1 dash PortSide cardamon bitters


Caramelize the pineapple with a blow-torch, place in a shaker and muddle. Add all the ingredients, add ice, shake and double strain into a chilled coupette glass.
